Easy Crockpot Chicken Cacciatore Recipe Freezer Meal

One of my favorite FREEZER MEALS to whip up for my family is this one right here. Easy Crockpot Chicken Cacciatore recipe can be made in 10 minutes or less. You can freeze it for up to 6 months. FREEZER MEALS are so great to make for sick or grieving friends and family. Or if you are expecting a baby or know someone who is, these are the perfect meals to prepare in advance.

I told my husband that I want to buy a deep freezer for the basement or garage. We buy a lot of our meat in bulk from Costco and It’s tough to prepare a lot of freezer meals with not a lot of freezer space. What are some of your favorite freezer meals to prepare?

There are two ways to prepare this dish. You can cook it from frozen in your crockpot on high for 8 hours, or you can thaw in the refrigerator overnight and cook in the oven for 1 hour. Exact instructions can be found on the recipe card.

Ingredients For Easy Crockpot Chicken Cacciatore recipe

2 boneless skinless chicken breasts, halved or 4 thin chicken cutlets
1 jar of spicy arrabbiata sauce (or marinara if serving to children)
1 zucchini, chopped
1 green bell pepper, chopped
1 yellow, orange or red bell pepper, chopped
1 onion, chopped
1 garlic clove, minced
1 tablespoon fresh or dried oregano

One-step process! The Freezer Meal

You literally throw everything into a foil pan or gallon-sized ziplock bag. If you use a ziplock bag, make sure you lay it flat and let it freeze like that. It will make it so much easier to store in your freezer and such a space-saving technique.

Cooking methods for Crockpot Chicken Cacciatore recipe

  1. Crock Pot Cooking Method: Cook from frozen on high for 8 hours or you can thaw overnight in the refrigerator low for 4 to 6 hours.
  2. Oven Cooking Method: Thaw overnight in the refrigerator. Cook at 375 degrees for 50-60 minutes or until chicken reaches an internal temp of 165 degrees.
  3. Serve over your favorite noodles. In my final image below I served it over zucchini noodles for a low-carb version.

Total Time: 10 minutes

Ingredients

  • 2 boneless skinless chicken breasts, halved or 4 thin chicken cutlets
  • 1 jar of spicy arrabbiata sauce (or marinara if serving to children)
  • 1 zucchini, chopped
  • 1 green bell pepper, chopped
  • 1 yellow, orange or red bell pepper, chopped
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 tablespoon fresh or dried oregano

Instructions

Add all of the ingredients into a gallon-sized Ziplock bag, lay it flat, freeze. Or layer the ingredients in a foil pan (like I did in my photos), cover tightly with foil, and freeze.

One of my all-time favorite recipes is this greek chicken! It's so easy to whip up, and Chobani® Greek Yogurt is the star of the dish. I like to use their plain yogurt to make the chicken marinade and also in my simple tzatziki sauce. Did you know that you can now earn on Ibotta with your purchase of Chobani® Greek Yogurt? Recipe:
Greek Chicken
Servings: 4
Ingredients
4 garlic cloves, minced
1/4 cup lemon juice
1 tbsp extra virgin olive oil
1/2 cup Chobani® Non-Fat Plain Greek yogurt
1 tsp fresh or dried dill
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
1 lb boneless, skinless chicken breasts, cut into 1-inch pieces

Instructions:
In a large bowl, add minced garlic, lemon juice, extra virgin olive oil, Chobani® Greek Yogurt, dill, thyme, salt, and pepper. Mix until combined.
Add chicken and coat well. Let the chicken marinade for at least 15 minutes.
Preheat a non-stick skillet over medium-high heat. Add 2 tablespoons of olive oil.
Remove most of the marinade from the chicken before adding it to the skillet, or else it will burn.
Add chicken in an even layer to the skillet, leave some space between the chicken pieces so they'll brown rather than steam. You may need to work in batches depending on how big your skillet is.
Cook the chicken for 3-4 minutes and then flip the chicken and cook for an additional 3-4 minutes or until cooked through (165°F).
Remove chicken to a plate to rest.
Serve chicken over rice with a dollop (or two) of tzatziki sauce, diced red onion, fresh dill, and a lemon wedge.
