Similar to potato chips, zucchini chips are made by thinly slicing zucchini, adding seasoning, and cooking until the moisture has evaporated out of them, leaving behind crispy, flavorful medallions. Zucchini is a lower-carb, less starchy vegetable than potatoes, and since they aren’t deep fried like most potato chips, zucchini chips are a healthier, lower-fat option.

How to Make Air Fried Zucchini Chipsets

  1. Prep the zucchini. Using a mandoline, slice the zucchini into thin chips. Place the zucchini chips into a large bowl. Add vinegar and gently stir to make sure all chips are coated in vinegar.
  2. Prep the air fryer. Spray the air fryer basket with nonstick cooking spray. Add zucchini chips in a single layer to the air fryer basket.
  3. Air Fry. Preheat the air fryer to 370°F. Air fry for 9 minutes, flip the chips over, and air fry for another 8-9 minutes. Once they’re done cooking, sprinkle the zucchini chips with salt.

How to Make Oven-Baked Air Fryer Zucchini Chips

Don’t have an air fryer? Bake them in the oven!

  1. Preheat oven to 225 degrees F. Line 2 baking sheets with a cooling rack. This will allow for even cooking.
  2. Bake for 2-3 hours depending on how thick your zucchini slices are.

How to Store Zucchini Chips

You can store your zucchini chips in a Ziploc or small airtight container in the fridge for 3 days. Zucchini chips tend to get soggy after a few days, so I suggest eating them up right away. Unfortunately, they just don’t stay fresh too long, and this really is a snack best enjoyed fresh!

It’s possible to freeze zucchini chips, but when you thaw them, they’ll likely be soggy. You can pop them back in the air fryer for a few minutes to help them regain a bit of their crispiness, but I would recommend just making a fresh batch instead.

How to Serve Zucchini Chips

Serve these on a platter with dips, add them as part of a charcuterie board, or just toss them in a bowl and snack while you watch a movie. There’s no way to go wrong with zucchini chips!

FAQs

Why are my zucchini chips soggy instead of crunchy?

Zucchini chips get crunchy after most of the water is removed from them during cooking. If your chips came out of the air fryer still a bit wet, place them back in for another 2-3 minutes and try again. Make sure you’re slicing them very thin, and that your air fryer is completely preheated before you begin cooking.

Can I use a regular oven instead of an air fryer to make zucchini chips?

Yes! Earlier in this post, I give the instructions for baking these in the oven. It takes a bit longer than the air fryer, but your zucchini chips will be just as delicious.

Can I use other types of squash to make air fryer chips?

Yes you can. Try butternut squash or acorn squash. Cut your slices very thin and watch them closely. These squash tend to have more sugar in them, so they will burn more easily.
